Ask around and you will discover pretty quickly that Vaticano Cucina offers consistently good food. As one of the few pasta restaurants in Edmonton, there is a wide selection of meals on the menu but you will want to be on the lookout for the pizzas and the varied pasta. You will immediately be drawn in by the familiar Vaticano favourites. The menu is made up of a mix of both familiar and inventive Italian dishes, so whether you are looking for classic Italian dishes or something new and unique for the best lunch in Edmonton, there is something on offer for everyone at Vaticano Cucina.

What to Sample at Vaticano Cucina

All the meals that are served at Vaticano Cucina are freshly made and presented well, with a clear attention to detail. Although everything that is served here is delectable, you will especially want to be on the lookout for the Pizzas and pasta, which is what the restaurant is mainly known for. In particular, classic Neapolitan pizzas that are made fresh out of the conspicuous wood-fired oven come with an assortment of rich toppings that include corn and lemon, onion, jam, ricotta, and anything else that you can imagine. Each of the pizzas available is given saintly names. For example, the “St. Teresa” is made with arugula greens, prosciutto, fontina cheese and is loaded with an anchovy vinaigrette. There are about fifteen wood-fired pizzas and there is something for all individuals from a basic Santa Maria, which also happens to be Vaticano’s take on the classic Margherita pizza, to the St. Francis, which is a perfect mix of flavours containing fresh figs, arugula, goat cheese, onion jam, fresh figs, and a balsamic drizzle. The pasta is another fan favourite; the offerings are creative and all made by hand in-house, which is something to look forward to. One of the most popular pasta is the bucatini carbonara that never disappoints. The Bucatini is served with a wonderfully creamy cheese and egg sauce before being topped with parmesan that has been freshly grated. There is also pasta that has been made using pureed butternut squash in the centre. Also popular with loyal customers are the trio of deep-fried rice balls that come stuffed with Fior Di Latte. These squash ball arancini have a crisp exterior and burst of flavour from the warm risotto rice held within their cores. All the dishes can be paired with alcoholic and non-alcoholic beverages, but the restaurant does a great job of pairing your food with the perfect wine from Vaticano’s wine selection. Equally as great as the pasta and pizzas and the Insalata or the salads.
